Baingan ka bharta is a flavourful dish cooked with roasted eggplant, tomatoes, onion and masala. Start by roasting the eggplant in an open flame until the flesh is visible and the skin is removed. Once it is cooled down, mash it properly. Add sarson ka tel or any preferred cooking oil in a pan, heat it till it gets smoky and add onion, tomato, garlic and spices of your choice such as jeera, ajwain, garam masala, and dhania. Sarso ka tel is rich in omega-3 fatty acids, antioxidants and monosaturated fats, which in turn keep the heart healthy and reduce inflammation in the body.
Palak Paneer with Desi Ghee
Palak paneer is a nutritious and creamy dish made with paneer, spinach and spices. Start by boiling spinach in boiling water and puree it in a blender. Once heated, add chopped potatoes and cauliflower to the pan and keep it on low flame until it gets soft and tender. Bhindi is a simple and flavourful dish made with okra, onion, tomatoes, and spices. Start by heating the sarson ka teal in a pan until it gets smoky. Add cumin seeds and dried chillies to the pan. Add chopped bhindi and saute it until it gets brownish and crispy. Add onion, tomato, garam masala, and other spices of your choice. Stir the bhindi and spices until they soften and mix well. Chana Masala with Olive Oil
Chana masala is a flavourful and tangy dish cooked with onion, tomato, ginger and other spices. You can start by sauteing the onion, garlic and ginger in olive oil. Saute the ingredients until they soften. Once done, add chana, chopped tomato and spices such as jeera, ajwain, dhaniya, garam masala, chana masala and other spices of your choice. Stir well and cook it till chana is mixed with the spices well, till it gets tender. Olive oil is good for health, boosts digestion, reduces the risk of diabetes and relieves pain.
